Step 1: What Is Fermentation?
Fermentation is the ancient process of using microorganisms — bacteria, yeast, and fungi — to transform food and drinks. The result? More nutrients, better flavour, natural carbonation, and gut-friendly probiotics.
At FizzCraft we focus on lacto-fermentation (sauerkraut, kimchi, pickles) and wild/cultured fermentation (kombucha, kefir, ginger beer).
Step 2: Choose Your First Brew
Tangy, fizzy, and endlessly customizable. The most popular first ferment.
Fast, dairy-free, and incredibly versatile. Great for beginners.
Just vegetables, salt, and water. The simplest ferment of all.
Spicy, sweet, and naturally fizzy. Perfect for summer.
Step 3: Get the Right Gear
You don't need much to start. Here's the absolute minimum for your first batch:
- A glass jar (wide-mouth mason jar, 1–2 litre)
- A breathable cover (cheesecloth or coffee filter for kombucha)
- Your culture (SCOBY for kombucha, kefir grains, or just salt for vegetables)
- Patience — most ferments are hands-off once set up

Step 4: Understand Safety Basics
The naturally acidic environment of fermentation prevents harmful bacteria from growing. Follow these basics and you'll be fine: use clean equipment, trust your nose, and when in doubt, throw it out.
